A Buyers Guide
A traditional French omelette pan is a shallow, curved pan, made of black steel. The pan is “seasoned” over time which enhances the non-stick properties.
An 8″ pan is perfect for a 2- to 3-egg omelette. If the pan is too big, the omelette will be too thin and will burn quickly.
Some manufacturers make omelette pans with upright sides. These are best avoided because it makes it difficult to turn out the cooked omelette. Curved, rounded edges are better.
The traditional black steel pan makes a great omelette because it heats up quickly and maintains an even heat throughout the entire pan so that your omelette is evenly cooked.
A traditional omelette pan is made of black steel and shouldn’t be washed with soap/washing liquid, or they lose their non-stick properties. However, the selection we have chosen for you are much easier to clean and care for.

How to make an omelette
Although there are many omelette recipes and methods, we think that this is one of the best.
3 free-range eggs
1/2oz unsalted butter
Splash of milk
Salt & Freshly ground pepper
This is the basic ingredient list. You can add practically any cooked meat or vegetable to make a more exciting omelette. 1oz of cheese also makes a delicious addition.
- Crack the eggs into a bowl, add a splash of milk, and beat together. Season with salt and pepper.
- Heat the butter in your omelette pan until it starts foaming.
- Pour the egg mix into the pan. Swirl the pan around to create an even spread across the bottom.
- Wait for around 30 seconds for the bottom of the omelette to lightly set. Push the set parts into the center of the uncooked omelette.
- Allow the bottom to set again in the heat. Again, push the set parts into the center. Repeat this process until the eggs have set, but are still soft in the center.
- Put your cheese, cooked meat or veg in the center of the omelette. Cook until the cheese has melted.
- Increase the heat. Cook for 30 seconds, or until it browns on the bottom.
- Fold the omelette in half. Turn it out of the pan.
