Hujiao Bing Recipe- Black Pepper Buns

The black pepper bun (hujiao bing or hu jiao bing in Chinese) is one of Taiwan’s most popular snacks and has a hundred years of history.

One of the best parts about this delicious snacks, is the fillings! When you realize that there is an explosion of flavor when you first bit into it, you will understand why these are so popular.

The meat is usually pork belly (which is where most bacon comes from). Immediately after the pig is slaughtered, several spices are immediately used to season the pork.

Also used in this recipe, are Taiwan’s tender green onions, and then roasted with white sesame seeds.

It is said that the black pepper bun originated in Fuzhou, mainland China, and the “green onion patties” from Fuzhou, and after it’s introduction, the two were combined to make this popular snack.

With the combined sensations of the warm, soft bread with its fresh smell, to the burst of bacon flavors that will fill your mouth and please your taste buds from the first bite, you should definitely try and share these scrumptious snacks!

Now, we are going to begin to cover the preparation of the Black Pepper Buns.

-First, the dough preparation that uses water:

Step 1: Put 125 grams of warm water in a small bowl and add 1/2 teaspoon of yeast.

Step 2: Add 1/2 teaspoon white sugar.

Step 3: Stir with a spoon so that the yeast and sugar are completely dissolved in the water.

Step 4: Put 250 grams of white flour in a separate bowl and add yeast water slowly.

Step 5: Stir the water and flour with chopsticks to form a snowflake-like mixture.

Step 6: Knead the dough together by hand and smooth the dough.

Step 7: Cover the bowl with a damp cloth and set it aside for 30 minutes.

Step 8: Place the dough on the cutting board and knead it a few times until the dough is smooth.

Step 9: The dough is then divided into nine equal parts.

-Now, the dough preparation that uses lard:

Step 1: Place 100 grams of white flour on the cutting board.

Step 2: Put 75 grams of lard on the flour.

Step 3: Rub the lard into the flour by hand until it begins to form a dough.

Step 4: Knead the chewy dough by hand until smooth.

Step 5: Roll the dough into a cylindrical shape.

Step 6: Divide into 9 equal portions.

-Preparing the Pork Belly:

Step 1: Rinse off 250 grams of pork with clean water.

Step 2: Take half of the washed pork belly and cut it into small, diced pieces with a knife.

Step 3: The other half is chopped vigorously until it begins to look like a paté.

Step 4: Place the diced pork belly and paté in a bowl and add 1/2 teaspoon of salt.

Step 5: Add 1/2 teaspoon of homemade pepper water.

Step 6: Drizzle 1/4 teaspoon soy sauce.

Step 7: Sprinkle 1/2 teaspoon of allspice.

Step 8: Sprinkle a few teaspoons of black pepper.

Step 9: Stir the sauce and meat with chopsticks until fully mixed.

Preparing the Green Onions:

Step 1: Taking about 6 or 7 green onions, wash them with clean water.

Step 2: Cut the chopped green onion with a knife.

Finalizing the Rested Dough:

Step 1: Take a small piece of water dough on the cutting board.

Step 2: Press into a round pie shape by hand.

Step 3: Take a small piece of the lard dough in the center of the flattened water dough.

Step 4: Wrap the lard dough in the water dough.

Step 5: The wrapped dough is pressed down on the cutting board.

Step 6: Roll the dough into an oval shape with a rolling pin.

Step 7: Roll up the dough from one end to the other.

Step 8: Roll up to the other end, forming a curled cylindrical dough.

Building the Black Pepper Buns:

Step 1: Place a round pie-shaped dough piece on the left palm and take a pinch of meat and place on the center of the dough piece.

Step 2: Grab a large amount of green onion and place on the meat.

Step 3: Wrap meat and green onion in the dough sheet like a bun and tighten the seal.

Step 4: Close the mouth, place the bun on the cutting board (sealed side down), and gently squash it with the palm of your hand.

Step 5: Repeat the above steps to make a second cake.

Step 6: Make all the Black pepper buns.

Baking Process:

Step 1: Spread a layer of tin foil on a baking sheet and apply a layer of cooking oil.

Step 2: Place the buns on the baking sheet evenly separated as they will rise.

Step 3: Prepare a bottle of maltose.

Step 4: Dip a pastry brush into the maltose and gently brush a layer on the surface of each cake.

Step 5: Put an egg yolk in a bowl and use a brush to dip into this bowl.

Step 6: Gently brush a layer of egg yolk on the surface of each cake.

Step 7: Spread white sesame or black sesame on the surface of the cake.

Step 8: Baking pan is then placed on the middle rack of the oven, preheated to 180 degrees, and bake for 25 minutes.
