  • 30 g corn oil
  • 10 g cocoa powder (use pure cocoa, not sweetened)
  • 35 g milk
  • 45 g cake flour (low-gluten)

  • 35 g sugar (for egg whites only)
  • A few drops lemon juice (or vinegar, to stabilize egg whites)

Chocolate Cream

  • 300 g heavy cream (chilled at least 12 hours)
  • 30 g sugar (adjust to taste, can reduce to 25 g)
  • 40 g chocolate sauce (choose a thick one so the cream doesn’t thin out)

Instructions

1. Make the Chocolate Batter

Sift in cake flour and gently stir in a “Z” motion until just combined (avoid overmixing).
