My love for egg muffins goes back ages. Even when I was five, my mom could make them; early in the morning for us to enjoy it with hot chocolate. Well, fast forward to today, I’m all grown, and I still can’t keep my hands on these low-carb, filling, soft and delicious muffins.

It doesn’t matter if you want a soothing, easy-to-make meal that’s a lot more nutritious and easy to grab when going out to work; these egg muffins will consistently deliver.

Naturally, we prefer egg muffins for breakfast, but you can also use them as snacks or even desserts. Generally, they make the perfect meal solution when you are looking for a quick bite.

The one we are making here, though, is my dad’s favorite recipe style. I learned it from him. Of course, today, I make a few alternates, and you too can do. It’s one of the simplest recipes you can use, so go on to try it today.


  • 3 eggs (40g/piece),
  • 45g low-gluten flour,
  • 3g baking powder,
  • 30g caster sugar,
  • 35ml milk,
  • 10ml passion jam,
  • 10ml corn oil.

Other Ingredients:

  • 60 grams of whipped cream,
  • 5 grams of caster sugar,
  • A little passion jam.


  1. Start by first separating egg yolk and egg whites, then set the egg yolks in a bowl. Also, add milk, jam, and corn oil to egg yolk. You should attain the image below.

  1. Take your whisker and use it to stir the mixture evenly. This will mean you break the eggs too.

  1. Now you can sieve the low gluten flour before you add it to the egg mixture. You can then mix it in with a whisker or a wooden spoon.

  1. Pump and stir evenly using your hand whisker. Take your time to do it as you need to attain the consistency we have below. You should have it all smooth because if you let it form lumps, you will not make the perfect muffin.

  1. Add the refined granulated sugar to the egg whites inside another bowl. Then you will use the whisker to make the perfect meringue with a transparent and shiny texture. Lift the whisk to see the consistency. It should have a close to severe foaming.

  1. Take 1/3 of the beaten meringue and add it to the egg yolk mix. Start to mix everything.

  1. Use a hand mixer to mix everything. Pump and mix well by hand. Take your time here; there’s no rush; you want to attain the perfect egg mix.

  1. Take the egg yolk mixture and then pour it back into the egg whites. And at this point, you want to mix it again.

  1. Mix everything well by turning it with the spatula. Take the time to mix it correctly with the spatula.

  1. Preheat the pan on medium heat, brush the pan with a little bit of oil, use a large spoon to take an appropriate amount of batter into the pan, first scoop a spoon into the pan, and then superimpose a small spoonful on the surface. It should look something close to what you see below.

  1. Cover the pan and fry for 3-4 minutes at low to medium level.

Cooking notes

  • The preparation of this muffin is the same as the chiffon method. The separated egg white and egg yolk must be clean, and there should be no water or oil in the basin.
  • When stirring the batter, don’t draw circles; use the technique of turning or drawing Zigzag to mix quickly.
  • When frying the muffins, use a medium-to-small fire. I use the A4 BOX multi-function pan. If not, use a flat pan. You must use a nonstick pan.
  • You always need to be watchful when reheating the eggs. You can be sure it will cook safely if you cook it within a short time. If you let it stay in the pans for a long time, then you’ll have it being dry and hard.
  • Always remember to use the nonstick spray to make sure the eggs don’t stick on the pan’s surface. It will make it easy to turn the eggs, you know.

Can you freeze the egg muffins?

I like this kind of egg muffins just because you can even have it stay in the fridge for up to a week. Notice too that they are always 100% freezer friendly. So you can keep them even longer in the freezer. Always remember to keep them in a freezer-safe bag.

So when you want to eat them, you can unwrap them and then cover them in a wet paper towel. You should then set it in the oven to reheat. However, if this was in the freezer, then you should thaw it first.

Veggies: cilantro, bell peppers, mushroom, and don’t forget to use the spring onions. It makes all the difference.

  • 3 eggs 40g/piece
  • 45 g low-gluten flour

  • Separate egg yolks and egg whites. Set the egg yolk in another bowl, and then add the milk, corn oil, and jam. Stir it to mix it and make sure everything is in. when it's mixed thoroughly; then you can add the low gluten flour.
  • Pump it with the whisk and stir again and again. To form a smooth egg mix and set it aside.
  • In the bowl with white eggs, then add the granulated sugar. Use an electric hand mixer to whisk and form a meringue. It should be rigid and shiny when you remove the mixer.
  • Add the egg yolk to 1/3 of the meringue, then mix it with a spatula or whisker.
  • Take the mixture above and add to the remaining egg whites. Mix it all again.
  • Brush the electric skillet with a little bit of oil and heat it.
  • Scoop the egg with a large spoon and then drop it in the skillet. Next, scoop with a smaller spoon and drop on the one you already set.
  • Cover the pan and let it cook at low to medium heat for 4 minutes.
  • Turn it over and cook the other side for another 4 minutes.
  • Whip your whipping cream. And sever the egg muffin with whipping cream.
