Grass Jelly is one of the most famous and popular snacks in Taiwan.
The Platostoma Palustre, also known as Chinese Mesona, is an herbaceous plant found commonly in Southeast China and Taiwan. Belonging to the mint family, the plant stalks are hairy with leaves similar to mint, growing in a tear drop shape with serrated edges. To process the leaves into grass jelly, they are cut, dried, boiled and finally oxidized.
Due to the moderate temperature and humidity in the summer, Guan Xi, Taiwan is conducive to the growth of Chinese Mesona.
During harvest time, Guan Xi is the leading production site for the drying and oxidation the Mesona plant on the island. Although the crops of Mesona planted here are not the largest in Taiwan, Guan Xi does have the highest plant yield along with the highest quality and most fragrant Mesona plants. - 7g Baking soda
- 50g Tapioca starch
- 50g White sugar
- 3 liters Clear water
Add the 3 liters clear water to a pot. Take dried grass out of cleaning net and place into the clear water. Soak the dried grass for 30 minutes. Do not discard the soaking water as it also be the boiling water.
Bring the water to boil Turn down to a simmer. Cook for 1 hour.
Bring the water to a boil again. Stir in the baking soda until dissolved into the boiling mixture for about 3 minutes. Turn down to a simmer again. Cook for 30 minutes.
Filter the grass juice through fine gauze to remove any impurities. Pour the filtered grass juice back into the pot. Continue simmering on low heat.
Dissolve the Tapioca Starch into a small amount of water in a separate bowl. Once dissolved, pour the starch water into the pot while mixing. Continue to mix slowly and add the white sugar.
Continue to stir on low simmer while all ingredients dissolve. The mixture will begin to slowly thicken. Once a jelly consistency is reached, remove the pot from the heat.Pour the Grass Jelly into a refrigeration container. Let cool to room temperature. After cooling, place the Grass Jelly in the refrigerator. Refrigerate for 5 hours or longer.
