My love for steamed pork patties
If you’re a regular at Yum Of China, you probably know how much I love steamed food. Steamed minced pork with lotus root is one of my go-to dishes.
Steamed pork patties are a healthy choice because they typically use fresh pork along with vegetables like lotus root and carrots, which are rich in protein, vitamins, and dietary fiber.
Steaming preserves the nutrients and reduces fat intake, making it a healthier option compared to frying or sautéing.
The process of making steamed pork patties is also quite simple. You just chop the meat, mix it with the right ingredients and seasonings, and steam it. This easy method doesn’t require advanced cooking skills, so even beginners can master it.
The Secret to Juicy Patties: A Mix of Lean Meat and Fat
Just like with dumpling fillings, I prefer using a mix of lean cuts of meat with some fat. Lean meat alone can be dry, so including some fat helps keep it juicy and flavorful.
Pork shoulder is a great choice because it’s tender with a good balance of fat and lean meat, ensuring juicy patties that aren’t too greasy or dry.
Pork butt is also excellent, thanks to its marbled fat and lean meat that produce a juicy, tender patty with a rich flavor and fine texture.
I don’t always chop the pork by hand, but when I have the time, I prefer to do it for a better texture. If using a food processor, blend briefly to prevent the meat from becoming too fine and losing its chewiness.
Ingredients:
- 250g pork (30% fat and 70% lean)
- 150g lotus root
- 30g shredded carrot
- 30g corn kernels
- 1/2 teaspoon salt
- 1 tablespoon soy sauce
- 2 teaspoons oyster sauce
- 1 tablespoon starch
- 1 tablespoon water
- 1 tablespoon chopped scallions
Instructions:
Prepare the Lotus Root:
- Wash and peel the lotus root.
- Slice it, then chop it into small pieces.
Prepare the Pork:
- Clean and cut the pork into small chunks, chop it into minced meat.
Mix the Ingredients:
- In a bowl, combine the chopped pork, lotus root pieces, shredded carrot, and corn kernels.
- Add the salt, soy sauce, oyster sauce, starch, and water.
- Mix the ingredients in one direction with chopsticks until well combined.
Shape and Steam:
- Transfer the mixture to the plate, flatten and smooth it out, shaping it into a round patty.
- Add an appropriate amount of water to a steamer and bring it to a boil.
- Place the plate in the steamer, cover, and steam over medium heat for 15-20 minutes, or until the patty is cooked through.
Finish and Serve:
- Once cooked, sprinkle the chopped scallions on top before serving.
