Making fantuan at home is easy and gives you the freedom to choose your favorite fillings. It’s perfect for a quick breakfast or a convenient lunch on the go. Follow my step-by-step instructions to create your own delicious and customizable rice rolls!
This is one of my go-to recipes for making fantuan (rice rolls). When I used to work in the office, I’d often prep these rice rolls for lunch. It’s such a convenient option because it saves me from ordering takeout, plus it’s healthier and more budget-friendly.
The great thing about this recipe is how customizable it is. You can switch up the fillings based on what you like or have available.
For this version, I’ve included eggs, Chinese ham sausage, cucumber, carrots, and pork floss, but feel free to get creative with your own combinations.
I love using a rice cooker to make the rice—it’s incredibly convenient and does the job perfectly. Once it’s set up, there’s nothing else to worry about.
While the rice is cooking, I can easily prepare the toppings, making the whole process smooth and efficient.
For the rice, I like to mix white glutinous rice with purple glutinous rice for a pretty color contrast. But if you don’t have purple rice, regular glutinous rice works just fine. I usually soak the rice overnight to help with the texture, but if you’re in a rush, you can skip the soaking and still get good results.
When cooking the rice, the ratio is simple—use equal parts water to rice. So if you’re cooking two cups of rice, use two cups of water.
Fantuan is an easy and versatile dish that’s perfect for meal prep or a quick snack on the go!
Ingredients:
- 150g glutinous rice
- 150g purple glutinous rice
- 1 egg
- 50g cucumber
- 50g carrot
- 5g granulated sugar
- 20g mayonnaise
- 1 Chinese ham sausage (about 60g, cooked)
- 20g pork floss
- 1 tsp cooking oil for frying the egg
Instructions:
1. Prepare the Glutinous Rice
- Rinse the Rice: Mix 1 cup of white glutinous rice and 1 cup of purple glutinous rice in a large bowl. Add water and gently stir the rice, then drain the water. Repeat this process 2-3 times until the water runs clear, which helps remove impurities from the rice.
- Soak the Rice: After washing, add enough water to fully submerge the rice and soak it overnight (about 8-12 hours). This ensures the rice absorbs enough water, making it soft and sticky after cooking.
- Cook the Rice: After soaking, drain the rice and place it into a rice cooker. Add an equal amount of fresh water (1 cup rice to 1 cup water) and cook it as you would regular rice. Cooking glutinous rice takes slightly longer, usually 30-40 minutes depending on the rice cooker. Once cooked, stir in 5g of granulated sugar while the rice is still hot, and mix evenly to enhance the flavor.

2. Prepare the Toppings
- Egg Pancake: Beat 1 egg in a small bowl with a pinch of salt. Heat a frying pan over medium-low heat, add a little vegetable oil, and pour in the egg mixture. Fry it into a thin pancake. Once cooked, remove and slice the pancake into thin strips.
- Vegetables: Peel and wash the cucumber and carrot, then cut both into thin strips. You can adjust the thickness to your preference. These add a refreshing crunch to the fantuan.
- Ham Sausage: Boil the Chinese ham sausage for a few minutes until heated through.


3. Assemble the Fantuan
- Prepare the Rolling Surface: Lay a piece of plastic wrap or sushi mat on a clean surface. This helps with rolling and keeps the rice from sticking.
- Spread the Rice: Take a portion of the cooked glutinous rice (about 150g) and spread it onto the plastic wrap, pressing it into a flat rectangular shape about 1-2 cm thick.
- Add the Fillings: Spread 1 tbsp of mayonnaise evenly on top of the rice. Then layer the cucumber strips, carrot strips, egg pancake, ham sausage, and pork floss in the center of the rice. You can adjust the quantity of each filling based on your preference.
- Roll the Fantuan: Use the plastic wrap to gently lift and roll the rice around the fillings, creating a tight roll. Be sure to press firmly as you roll to keep everything compact. Twist the ends of the plastic wrap to secure the roll.




4. Cut and Serve
- Once the roll is formed and secure, slice it in half or into smaller pieces for serving. The fantuan is best enjoyed fresh but can also be wrapped tightly and stored in the fridge for a quick snack later.

Notes:
- Tight Rolling: When rolling the fantuan, keep it tight to prevent the fillings from falling out. If necessary, press the roll lightly with your hands after rolling to ensure compactness.
- Filling Variations: Feel free to get creative with the fillings! You can substitute the ham sausage with other proteins like grilled chicken or tofu, or even add a dash of soy sauce or pickled vegetables for extra flavor.
- Sweet Fantuan Option: If you prefer a sweeter fantuan, you can adjust the sugar level in the rice and experiment with sweet fillings like red bean paste or sweetened taro paste.
