Ingredients

  • 250 g walnut kernels
  • 75 g rock sugar
  • 25 g maltose
  • 50 g purified water
  • a little cooked white sesame.

Instructions

  • Heat your oven, and this should take about 20 minutes to reach a temperature of 300°F. Put the walnut kernels in the oven and roast at 150 degrees for 10 minutes to create a fragrance.
This should take you a shorter time than pan roasting. Besides, it makes your work even easier when you roast it in the oven. You will quickly attain the nutty flavor but also the crunch.
  • Put rock sugar, maltose, and pure water into the pan and bring to a boil. You want to heat it until your sugar starts to sizzle on the edges.
  • Now you want to reduce the heat to cook over medium heat until the rock sugar melts. Turn to low heat and cook while gently stirring until the syrup is thick. Just make sure you don't go anywhere. It has sugar, so if you go away, you could quickly start to burn the sugar.
  • Keep simmering it as you want to attain the image below. We can only say at this point that you should cook until light golden brown and turn off the heat. Now it's ready for the coating.
  • Pour the toasted walnuts into the syrup while it is hot and stir evenly so that each walnut is covered with syrup. This is going to be what forms the coating, you know.
  • Sprinkle a layer of cooked white sesame seeds and mix well. Of course, it's still going to give it even more nutty flavors. This is going to be quite delicious to use as a snack.
Keep stirring until it's then ready to use.
  • Pour them on a nonstick baking pan, spread out one by one, and let it cool thoroughly before sealing and storing. Just make sure it's as you can see below.
