Soak the dried fungus with water and clean the old roots too. Remember to divide them into flowers then as well.
Wash the bamboo shoots and if you need to, then cut them into tiny slices.
Now prepare your pork tenderloin and cut it into tiny slices.
Also, add the cooking wine, salt, and pepper for the marination of the same. I like to marinate mine longer to make sure it absorbs all the marinade flavors.
Blanch the bamboo shoots slices in boiling water. Then leave it in the water for about 5 minutes.
Remove the bamboo shoots from the water and drain out the water
Set your pan or wok on medium to high heat and add on a little bit of oil. Let it heat up, and then add the ginger to cook a bit before adding the pork and keeping stir-frying. You should cook it until it attains the change of color to whitish and it’s cooked on either side.
Add the bamboo shoots and the fungus as you keep stirring.
Also, add the salt if you need to, together with the light soy sauce, keep stirring for a bit.
Add chopped chives to the mixture, stirring before you get it out and serving it.
It will also go well with the different styles of rice you may have.
Always remember it's one of the easiest meals you can make. It will take about 40 minutes to make the meal ready.
