Grass Jelly Reipe

Grass Jelly is one of the most famous and popular snacks in Taiwan.

  • 100 g Chinese Mesona. If you can’ find it locally use https://www.amazon.com/dp/B00ZTQ9650.
  • 7 g Baking soda
  • 50 g Tapioca starch
  • 50 g White sugar
  • 3 liters Clear water


  • Add the 3 liters clear water to a pot. Take dried grass out of cleaning net and place into the clear water. Soak the dried grass for 30 minutes. Do not discard the soaking water as it also be the boiling water.
  • Bring the water to boil Turn down to a simmer. Cook for 1 hour.
  • Bring the water to a boil again. Stir in the baking soda until dissolved into the boiling mixture for about 3 minutes. Turn down to a simmer again. Cook for 30 minutes.
  • Filter the grass juice through fine gauze to remove any impurities. Pour the filtered grass juice back into the pot. Continue simmering on low heat.
  • Dissolve the Tapioca Starch into a small amount of water in a separate bowl. Once dissolved, pour the starch water into the pot while mixing. Continue to mix slowly and add the white sugar.
  • Continue to stir on low simmer while all ingredients dissolve. The mixture will begin to slowly thicken. Once a jelly consistency is reached, remove the pot from the heat.Pour the Grass Jelly into a refrigeration container. Let cool to room temperature. After cooling, place the Grass Jelly in the refrigerator. Refrigerate for 5 hours or longer.
  • Remove the chilled glass Jelly from the refrigerator. Gently release the jelly from the container upside down onto a chopping board. Cut the jelly into.
