Ingredients

  • 400 g lettuce
  • 1 tsp salt
  • 2 tbsp cooking oil
  • 1 tbsp minced garlic
  • 20 g fresh chili pepper julienned
  • 1 tbsp light soy sauce
  • 1 tbsp Chinese black vinegar
  • 1 tsp sugar

Instructions

Cook the lettuce

  • Prepare the lettuce by trimming the root end and separating the leaves.
  • Sprinkle a little salt over them.
  • Soak the lettuce in water for 5 minutes to remove any dirt or impurities. Set it aside.
  • Bring a pot of water to a boil.
  • Add a teaspoon of salt and cooking oil. Blanch the lettuce in the boiling water for about 30 seconds until it becomes vibrant and slightly wilted.
  • Then, remove it and drain any excess water. Neatly arrange the blanched lettuce on a serving plate.

Prepare the sauce

  • Prepare the sauce by combining the minced garlic and julienned chili pepper in an empty bowl.
  • Heat the cooking oil in a small saucepan until hot, then pour it over the garlic and chili mixture to release their flavors and aromas.
  • Add the light soy sauce, Chinese black vinegar, and sugar to the garlic and chili mixture.
  • Stir well to create a tangy and savory sauce.
  • Pour the sauce over the blanched lettuce, ensuring it is evenly coated.
