400gMalabar spinach
2tspsalt(one teaspoon for soaking and another teaspoon for blanching)
Use a sharp knife or kitchen shears to cut Malabar spinach into smaller, bite-sized pieces.
Wash the Malabar spinach thoroughly under running water. Once clean, sprinkle a spoonful of salt directly over the spinach and gently massage it in. Then, soak the salted spinach in water for about 10 minutes. This step enhances the flavor of the spinach and ensures it is perfectly seasoned.
