Ingredients

  • 400 g okra washed and sliced into thin pieces
  • 3 eggs
  • 1 tsp salt
  • 1 tsp ground white pepper
  • 1 tbsp dried mini shrimp
  • 2 tbsp cooking oil

Instructions

Step 1: Prepare the Okra

  • Wash the fresh okra thoroughly and pat them dry with a paper towel. Trim off the ends and slice the okra into thin pieces.
  • In a bowl, combine the sliced okra with 1 tsp of salt and 1 tsp of ground white pepper. Thoroughly mix the seasoning with the okra, ensuring each piece is well coated.

Step 2: Prepare the Okra and Eggs Mixture

  • In a separate bowl, beat the eggs until frothy and well combined.
  • Pour the beaten eggs over the seasoned okra.
  • Add the dried mini shrimps to the mixture, and gently stir everything together.

Step 3: Stir-Fry the Mixture

  • In a pan, heat 2 tbsp cooking oil over medium-low heat.
  • Once the pan is heated, carefully add the okra and eggs mixture. Allow it to sizzle gently as the flavors meld together.
  • Gently pull the egg across the pan to form large, soft curds.
  • Continue to fry the mixture until the okra and eggs take on a beautiful golden brown color on both sides.
  • Once the Okra and Eggs dish reaches perfection, remove the pan from the heat. Transfer okra and eggs to a plate to serve
