Peach Gum Dessert

Ingredients

  • 15 grams peach gum
  • 1 tiny snow Fungus
  • 30 grams rock sugar
  • 8 red dates

Instructions

  • Soak peach gum in clean water overnight to make sure they soften fully and even triple in size. Some people even prefer to soak it for just a few hours but of course, whatever works for you is okay.
  • The volume of the soaked peach gum can expand a lot. However, the soaked peach gum can be washed repeatedly to remove the black impurities and break them into small pieces of uniform size. Just remember to drain out the excess water.
  • Also, soak the snow fungus for about 30 minutes. Check them out to notice that in about 15minutes, they plump up but leave them to instill to soften. Consequently, remove the roots and the yellow hard part and tear them into small flowers by hand.
  • Put the peach gum and snow Fungus into the pot, add pure water, and heat it on a stovetop.
  • After boiling over high heat, change to low heat and continue to cook for 30 minutes. At this time, the soup begins to become a bit sticky gradually. Uncover the pot and then follow through with the step below for more steps.
  • Add the washed red dates and continue to cook for 1 hour, at which time the soup is getting thick and soft.
  • Add rock sugar and continue to cook for another 10 minutes.
  • Allow the rock sugar to melt to attain the perfect consistency ultimately.
