With a hint of home cooking, you can enjoy the delicious flavors of a restaurant-style crispy oyster omelette.

My recipe preserves the delectable textures and flavors you love while minimizing the use of oil, providing a healthier twist on a traditional Chaozhou delicacy.

What you need to make oyster omelette:

  • Oysters, choose plump and fresh oysters for the best taste and texture. Look for ones with intact shells and a vibrant sheen.
  • All-Purpose Flour (for washing the oysters), coating the oysters in flour helps to remove impurities and ensures they stay firm during cooking.
  • Sweet Potato Flour, sweet potato flour creates a delicate, crispy texture that pairs perfectly with the oysters.
  • Water, it will be used to create the batter that coats the oysters.
  • Green Onion (finely chopped), fresh green onions add a subtle yet aromatic flavor to the dish.
  • Fish Sauce, fish sauce brings a savory umami depth to the batter and complements the oysters beautifully.
  • Eggs
  • Lard, opt for a neutral-flavored cooking oil like vegetable or canola oil, which will contribute to the crispiness of the omelette.
