What is A Choy?

A Choy, or AA choy also known as Taiwanese Lettuce, is a leafy green vegetable commonly found in Taiwanese and Chinese cuisine.

“AA Choy” is known as “You Mai Cai” (油麦菜) in Mandarin, which translates to “Oilseed Rape” or “Canola Greens” in English.

I can see that there is a common misconception among some people who believe that ‘A Choy’ is derived from the leafy parts of the Celtuce plant, also known as Wo Sun.

However, this is entirely incorrect.

Although these vegetables may appear similar to some, they are distinct and separate varieties.

You can certainly use the leafy parts of Celtuce (Wo Sun) as an alternative ingredient if you can’t find AA Choy.

A Choy is not only refreshing but also a nutritious vegetable. It is low in calories and rich in vitamins and minerals. Some of the beneficial nutrients found in A Choy include iron, calcium, magnesium, phosphorus, potassium, vitamin C, and various B vitamins.A Choy

Due to its mild taste and versatility, A Choy can be used in various dishes such as stir-fries, soups, salads, and even pickled preparations. Its refreshing and crunchy nature makes it a popular choice in Taiwanese and Chinese cuisine, adding both flavor and texture to different dishes.

Where to buy A Choy?

You can typically find a choy or Taiwanese lettuce in Asian grocery stores or specialty produce markets that cater to Taiwanese and Chinese cuisine. These types of stores often carry a variety of fresh Asian vegetables, including a choy.

You can try searching for Asian grocery stores in your local area or check online directories for Asian markets near you. Additionally, some larger supermarkets with a diverse produce section may also carry a choy or Taiwanese lettuce.

If you’re having difficulty finding it locally, you may consider reaching out to local farms or farmers’ markets that specialize in Asian vegetables.

To achieve a perfect stir-fry with A Choy (Taiwanese Lettuce), here are some tips to consider:

  • Fresh A Choy: Start with fresh A Choy for the best flavor and texture. Look for vibrant green leaves and firm stems. Avoid wilted or discolored leaves.
  • Prep ahead: Wash the A Choy thoroughly and trim off any tough ends of the stems before starting the stir-fry. Having the A Choy prepared and ready-to-go will make the cooking process smoother.
  • High heat: Use high heat throughout the stir-frying process. This helps to retain the vibrant color and crispness of the A Choy.
  • Quick cooking: A Choy cooks quickly, so be prepared with all the ingredients and utensils before you start stir-frying. Overcooking can result in a loss of texture and flavor.
  • Seasoning: Season the stir-fried A Choy with salt, chicken bouillon powder, and oyster sauce to taste. Start with a small amount and adjust according to your preference. Remember to stir well to evenly distribute the seasoning.
  • Stir constantly: Keep the A Choy moving in the pan by continuously stirring or tossing it. This ensures even cooking and prevents sticking or burning.
  • Serve immediately: Transfer the stir-fried A Choy to a serving dish and serve it hot. Enjoy the perfect stir-fried A Choy as a flavorful side dish or as part of a main meal.
